Italian chicken recipe with potatoes and sauce
This Italian chicken recipe is bursting with flavor and just a real joy to eat. The tomato sauce and seasonings are baked right into the potatoes which compliment the chicken nicely.
Mamma prefers to cut the chicken breasts in half to make smaller pieces. If you choose to do so, a good pair of cooking shears should work well. Either way is just fine.
This recipe brings back memories of my childhood. Mamma would always prepare at least one chicken dish during the week and this one was usually it. I remember coming home from school and smelling the chicken baking in the oven. I can also remember my brothers and I always fighting over who would get the rest of the leftover potatoes. My father would usually resolve the issue by taking them for himself!

4 Chicken breasts (whole or cut in half)
1 small 8 ounce can of tomato sauce
Salt and pepper to taste
Grated parmesan cheese
3 med. size Potatoes (peeled and cut into small bite size pieces)
1 4.5 ounce jar sliced mushrooms (or can)
Place chicken pieces in the middle of a large baking pan close together. Surround chicken with cut up potatoes. Pour tomato sauce all over potatoes only. Then add water to the tomato can and pour over potatoes as well. Keep adding water until potatoes are mostly covered.
Season everything with salt, pepper, onion powder and garlic powder. Use generously but don’t over do it. Next, using your hand, completely cover chicken pieces and potatoes with grated cheese and breadcrumbs.
Bake in preheated 400 degree oven for about 1 to 1 &1/2 hours & serve.
