Marinara Sauce with Sausage



For those of you who like a hearty sauce, this Marinara Sauce with Sausage dish is just for you.

Mamma usually adds 2 sweet and 2 hot sausages, just to spice it up a little bit.

With me, my two brothers and my father living in the same house, Mamma was always looking for ways to keep us full. This recipe always seemed to do the trick!

Quick and easy, this recipe will quickly become a family favorite for years to come.

Ingredients:

4 tablespoons olive oil

1 small onion, finely chopped

1 clove garlic, finely chopped

1 (28 ounce) can whole tomatoes (San Marzano tomatoes recommended)

1 (14.5 ounce) can whole tomatoes (San Marzano tomatoes recommended)

¾ cup finely chopped Italian parsley

1 teaspoon dry oregano

2 bay leaves

Salt and pepper to taste

3 basil leaves, chopped (or 2 tablespoons dry basil)

2 teaspoons honey

4 links of sausage (sweet or hot)

Preparation:

In a frying pan, add 2 tablespoons of olive oil and fully cook sausage on medium/low heat for about ½ hour or so, turning occasionally. When done put aside to cool, then cut sausage links into ¼ inch thick small circular slices.

In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic and sauté 5 minutes until onions are translucent. Add the tomatoes crushing them with your hands as you add them with their juices along with the parsley, oregano, bay leaves, salt and pepper. Next add the sliced sausages to the sauce. Bring to a boil, reduce heat and simmer, uncovered, about 1 hour until the sauce thickens. Remove from heat, add basil and honey. Mix gently and season with salt and pepper to taste. Serve over your favorite pasta!
